Creamy, Pea Salad
- 1 bag (12oz) frozen peas
- ¼ purple onion, diced
- ¼ cup vegan mayonnaise (I used "Just Mayo")
- salt & pepper to taste
- Let peas thaw.
- After peas have thawed, combine with the diced onion and vegan mayo.
- Add salt and pepper to taste.
Tip: Make this the night before serving to allow all the flavors to meld together... and if serving for Easter, it saves you some time too!
