Raw, “Pad Thai” Peanut Salad
 
ingredients
for the salad
  • 2 zucchinis
  • 4 cups shredded cabbage
  • 1 red bell pepper, diced
  • 2 carrots, shredded
  • 1 cup peanuts, crushed
  • ½ purple onion, diced
  • ¼ cup sesame seeds
  • ¼ cup cilantro
for the dressing
  • ¼ cup Bragg's liquid aminos
  • 2 tbsp peanut butter
  • 2 tbsp tahini
  • 2 tbsp balsamic vinegar
  • 2 tbsp agave
  • 1 tbsp minced ginger
  • 2 tsp chili paste (my favorite is Sambal Oelek)
  • ½ tsp black pepper
instructions
  1. Begin by spiralizing the zucchinis. I use a Veggetti Spiral Slicer (If you don't have a spiral slicer, you can always use a potato peeler)_.
  2. Mix the salad ingredients in a large bowl.
  3. Whisk dressing ingredients in a small bowl or process in a blender for a smoother consistency.
  4. Pour the dressing over the salad and toss.
