Raw, “Pad Thai” Peanut Salad
- 2 zucchinis
- 4 cups shredded cabbage
- 1 red bell pepper, diced
- 2 carrots, shredded
- 1 cup peanuts, crushed
- ½ purple onion, diced
- ¼ cup sesame seeds
- ¼ cup cilantro
- ¼ cup Bragg's liquid aminos
- 2 tbsp peanut butter
- 2 tbsp tahini
- 2 tbsp balsamic vinegar
- 2 tbsp agave
- 1 tbsp minced ginger
- 2 tsp chili paste (my favorite is Sambal Oelek)
- ½ tsp black pepper
- Begin by spiralizing the zucchinis. I use a Veggetti Spiral Slicer (If you don't have a spiral slicer, you can always use a potato peeler)_.
- Mix the salad ingredients in a large bowl.
- Whisk dressing ingredients in a small bowl or process in a blender for a smoother consistency.
- Pour the dressing over the salad and toss.
