Cabbage Soup
 
ingredients
  • ½ head cabbage, shredded or chopped
  • ½ onions, chopped
  • 1 can of diced tomatoes (Rotel)
  • 1 green pepper
  • ½ stalk of celery
  • 2 large carrots, chopped
  • 4 cups vegetable broth
  • ½ cup water
  • 1 package Lipton onion soup mix
  • black pepper
  • any fresh herbs or spices of your choice (I like to use oregano and garlic powder)
instructions
  1. Chop all vegetables to the size of your choice. For vegetable chopping in soup, I always say the smaller the better, as it has been proven that the more vegetables are chopped, the more nutrients are released.
  2. Place all the chopped vegetables and Lipton onion soup mix in a big pot.
  3. Cover with water and vegetable broth and stir together.
  4. Bring to a boil, then boil gently for 10 minutes.
  5. Next, add in your pepper and spices. Cover, reduce heat and simmer until all the vegetables are soft, but would still have a little crunch at the bite.
  6. Eat up :)

Cabbage soup is a great soup to eat anytime. The ingredients are practically all negative calorie foods, so you can eat as much as you like without having to count calories! However, I don’t recommend the Cabbage Soup fad diet – you still need to have fresh, raw vegetables for a healthy life. Although this soup is delicious, when it comes to vegetables… raw is best!
